These paleo almond spice cookies are Gluten Free | Paleo | Soy Free | Organic | Non-GMO | Sugar Free | Sweetened with Raw Honey
This recipe was created for healthy comfort on a cold day. Sit by the fire, sip a coconut latte, and enjoy the sweet spice of this incredible wellness cookie.
2 ¼ cup almond meal
¼ cup coconut flour
6 tablespoons butter softened
¼ cup honey
¼ cup coconut sugar (plus additional for sprinkling on top of cookie)
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ground clove
2 teaspoons ground ginger
1 tablespoon vanilla
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon sea salt
In a food processor or mixer, combine the dry ingredients.
Add in butter, vanilla, and honey.
Form into small balls. Gently press into cookie shape.
Sprinkle with more coconut sugar
Bake in a 350 degree over for approximately seven minutes, until top is no longer shiny.
